Sweet and sour pork is no doubt one of the best known and most popular Chinese dishes. If you don’t care for pork, try sweet and sour chicken or fish instead.

No.2 Kung Pao Chicken (宫保鸡丁; gōngbǎojīdīng)
Sometimes thought of as the national dish of China, kung pao chicken tastes like a slightly spicy, peanutty version of sweet and sour chicken. Although this dish is well-known both in and outside of China, few people know its history. One popular, but unconfirmed story about this dish says that during the Qing Dynasty, a man whose official title was “宫保” was appointed to be the Sichuan Provincial Governor. One day he was bombarded with so much work that he missed lunch. With nothing to eat at home, he went to a small restaurant nearby, only to find that they had run out of everything except peanuts and chicken. Seeing that the governor had come into his restaurant, the chef quickly stir-fried the peanuts and chicken together. The dish turned out to be quite delicious and soon became extremely popular. It came to be known as “宫保鸡丁” (literally, “Gong Bao diced chicken”) in honor of the official the dish was first made for.
